Asian Supper Menu

Awhile back, we had some friends over for supper and games.  In my efforts to plan a meal that could mostly be prepared ahead of time, this is what I came up with...

Crockpot Teriyaki Chicken
Oven-Baked Rice
Szechuan Green Beans
Chinese Cabbage

Crockpot Teriyaki Chicken- recipe above from supperforasteal.com.  This recipe was perfect.  I think I might have added more cornstarch to make the sauce thicker, but other than that it was great.

Oven-Baked Rice- recipe above from shockinglydelicious.com.  Baked per instructions, but rice was not quite done.  I used a stoneware baking dish, so that might be the trouble.  Next time, I will add a bit more liquid and bake it 15-20 minutes longer.

Szechuan Green Beans- the recipe above looks great and probably tastes better than the one we use, but it looks a bit more time consuming.  This cannot be made ahead of time, so I used a simpler recipe.

1lb green beans, frozen or fresh
2 T soy sauce (or more, to taste)
2 T olive oil
3 cloves garlic
3 green onions, chopped (I omit)
1 t fresh grated ginger (or more, to taste)

Stir fry green beans, oil, soy sauce and ginger in skillet for 25 minutes or until tender.  Press garlic cloves over green beans.  Add chopped green onions.  Stir fry 5-10 more minutes.  Serve immediately.

Chinese Cabbage- again, the recipe above is probably great, but I used a different one that my Mom always makes.  The finished salad looks like the one pictured above.

2 T Sesame Seed
1/2 c sliced slivered almonds
1/2 medium cabbage, thinly sliced
1-2 bunches green onions, chopped*
1 pkg chicken Ramen noodles, broken up

dressing:
3 T white vinegar
1/2 t vinegar
1/2 t pepper
2 T sugar
1/2 c olive oil
chicken flavoring packet from Ramen noodles

Toast sesame seeds and slivered almonds in 2 T butter.  Add to cabbage, onions, and ramen noodles.  Mix dressing in blender.  Pour over cabbage mixture and stir.
*In place of the green onions, I chopped and added most of the inside section of a head of green leaf lettuce.

Notes- Everything except the green beans can be made ahead of time.  Chicken in the crockpot, rice in the oven, salad sitting in the fridge.  When you put the beans in a serving dish and get ready to eat, definitely cover with foil as they cool down quickly.

Lastly, hope that one of your friends offers to bring something. :) Brittany did, so I suggested dessert, secretly hoping she would bring her awesome chocolate cake.  It was fabulous, as always!

    I haven't tried baking rice
    I always do steamed rice
    which tastes better?

    1. I don't know which is better. Probably steamed. :) I tried the baked because I liked the idea of just pulling it out of the oven and setting it on the table. Less to have to do last minute, when I'm usually stressed out.
